1. The Canadian Dream Recipe

What flavours come to mind when thinking about Canada? Immediately the first flavour that comes to mind is maple, but maple can be very overpowering if used too much. To balance, the drink includes apples (in particular Gala Apples) and rhubarb. Apples, Rhubarb and Maple pair very well together.

You will need:
  •  2oz Crystal Head Vodka
  •  2.5oz Gala Apple & Rhubarb Shrub
  •  Bar Spoon (0.10oz) Canadian Maple Syrup
 
Instructions:

1. Shake on ice for 8-11 seconds
2. Strain into Collins Glass (taller glass) over fresh ice
3. Top with Ginger Beer (roughly 1-2 oz)
4. Garnish with a Rhubarb “Headband” and a thinly sliced Apple

Note: The Gala Apple + Rhubarb Shrub can be made ahead of time. A Shrub is a vinegar- based simple syrup. Mostly fruit or vegetable based, this particular Shrub uses Gala apples and rhubarb from Ontario, raw turbinado sugar, and local apple cider vinegar. Local substitutions can be made!
 
Shrub Recipe:
  • ½ Cup of finely diced Royal Gala Apples
  • ½ Cup of finely diced Rhubarb
  • ½ Cup Water
  • ½ Cup Raw Turbinado Sugar
  • ½ Cup Apple Cider Vinegar
Shrub Instructions:
 
  1. Add ½ cup diced apples and ½ cup diced rhubarb into a pot with ½ cup water
  2. Place pot on stovetop and turn on medium heat
  3. Stir frequently for about 30-40 mins, or until all contents are soft to touch
  4. Once fruit contents are soft to the touch, slowly add ½ cup Raw Turbinado Sugar
  5. Stir until all sugar is dissolved
  6. Wait until temperature is brought back up
  7. Slowly add ½ cup Apple Cider Vinegar
  8. Keep pot on heat source for another 10-15 minutes, stirring frequently
  9. Removed pot from heat, and allow contents to cool down
  10. Using a sieve (fine strainer), strain away liquid from fruit contents
  11. Muddle fruit contents down and mix all liquids together
  12. Repeat the Fine Straining Process two times to ensure all solid contents have been separated and only pure liquid is left
  13. Store in a Mason Jar or other glass container, date and label

Shrubs can last in the fridge for up to 6 months!

2. Caesar
 
  • 2oz CRYSTAL HEAD vodka (CHV)
  • 0.5oz Lime Juice
  • 0.25oz Malbec Red Wine
  • 5-6 Dashes Worcestershire Sauce
  • 2-3 Dashes Tabasco Sauce
  • Fresh Cracked Salt and Pepper
  • 2-3oz Clamato Juice
  • Collins Glass, regular ice, with a Celery Salt Rim
  • Olive Skewer, Celery Stick, Lemon and Lime Wedge Garnish

3. Bloody Mary
  • 2oz CHV
  • 0.5oz Lime Juice
  • 5-6 Dashes Worcestershire Sauce
  • 2-3 Dashes Tabasco Sauce
  • Fresh Cracked Salt and Pepper
  • 2-3oz Tomato Juice
  • Collins Glass, regular ice, with Regular Salt Rim
  • Celery Stick & Lime Wedge Garnish
